It was simple, easy, and delicious!
2 large boneless skinless chicken breasts
12oz jar of "clean" salsa (no added sugar)
4 small zucchini, diced
1/4 medium pineapple, diced
- Place chicken on bottom of crock pot.
- Pour salsa and water over chicken.
- Cook on low for 4-6 hours.
- Remove chicken from crock pot and shred using 2 forks.
- Place shredded chicken back in crock pot for ~1 hour.
- Serve chicken over zucchini and pineapple.
