I found this recipe on Pinterest, and though I didn't have many of the ingredients in the house I improvised and ended up with a sweet, light salsa.
yield: 5 cups of salsa
ingredients
1/2 large cantaloupe, diced
1/2 white onion, diced
1 green bell pepper, diced
2 ears corn, cooked & cut off the cob
2 tbs fresh basil, chopped (I used purple basil)
3 tbs lemon juice
1/4 tsp sea salt
directions
- In a large bowl, combine cantaloupe, onion, pepper, and corn.
- Add basil, lemon juice, and salt, tossing to evenly distribute.
- Refrigerate for at least 30 minutes.
- Enjoy!
