We paired it with Dr. Pepper sauced boneless wings -- it was delicious!
I also used the slicer/shredder attachment for my KitchenAid mixer for the first time (using the thin slice cone) and it provided paper thin slices of cucumber.
1/2 medium red onion, thinly sliced
1 large spring onion, thinly sliced
2 cucumbers, thinly sliced
2 tbs olive oil
2 tbs fresh dill, chopped
1/4 tsp sea salt
1/4 tsp black pepper
3 tbs vinegar (I used blood orange vinegar)
- Combine all ingredients in a medium bowl.
- Toss/mix until well mixed.
- Cover and chill, at least 15 minutes, until ready to serve.
