1/4C garlic scape & almond pesto
4 slices of bread (I used honey whole wheat)
fresh mozzarella cheese
- Butter two slices of bread on one side and spread 1 tbsp of garlic scape and almond pesto on the other side.
- Place a generous helping of mozzarella cheese (slices or bite sized balls) in between the two pesto sides of bread.
- Cook over medium heat, flipping once, until cheese is melted and bread is toasted.
- Repeat for second sandwich.
