Banana Buttermilk Muffins

I found this recipe while googling for things to do with my soon-to-expire buttermilk, they were a huge hit.
A definite do for breakfast!

1/2C butter, softened
1C sugar
2 eggs
2 large ripe bananas, mashed
1tsp vanilla
2C all-purpose flour
1tsp salt
1tsp baking powder
1/2tsp baking soda
1C buttermilk

  1. Preheat oven to 400 degrees. 
  2. In a large bowl, cream butter and sugar. 
  3. Add eggs one at a time, beating well after each. 
  4. Add bananas and vanilla, mix well. 
  5. In another bowl, combine flour, salt, baking powder, and baking soda. 
  6. Add flour mixture to creamed mixture, alternating with buttermilk.
  7. Grease muffin tins. 
  8. Fill muffin cups 2/3 full. 
  9. Bake for 15-18 minutes, until toothpick comes out clean. 
  10. Enjoy!
